Chianti & Bolognese – one of my favourite winter pairings.
I would say about 150ml goes into the bolognese which cooks for 1.5-2 hours whilst I enjoy the rest!
This bottle of Chianti comes from the largest and oldest wine estate in the Chianti Classico region- Barone Ricasoli, one of four of the oldest wine estates in the world, very cool.
Red cherries and plum, a touch of blackcurrant. Lingering flavours of peppery spice and savoury notes of dried herbs, sage and thyme. It needed an hour of breathing time but it was soft and silky with medium acidity. Incredibly drinkable and super duper with the Bolognese.
